Dulce de Manzana (Apple Preserves)

Turkish Sephardic Jews serve this sweet apple preserve as they wish their family and friends a sweet new year.
3 cups granulated sugar
1 ½ cups water
2 pounds apples, granny smith, gala or delicious
Juice of ½ lemon
1 Tablespoon rosewater or 1 teaspoon vanilla
¼ cup slivered almonds

Mom's Honey Cake with Apple Confit

Honey cake is traditionally eaten for Rosh HaShanah, the Jewish New Year—the honey’s sweetness symbolizes our wishes for a sweet year. This is my mother's recipe, which she makes in Israel, freezes, and sends to me in the mail.

2½ cups flour
2 heaping teaspoons baking soda
3 eggs, beaten
1 cup sugar
2/3 cup honey
1¼ cup brewed coffee
6 tablespoons canola oil
Salt
Pinch cinnamon

3 apples, peeled and sliced thinly crosswise
1 cup sugar
1 vanilla bean, split
2 cinnamon sticks
1 tablespoon honey
3 cloves

Sally Rosenkranz's Honey Cake

Sally Rosenkranz, who was from Radom, Poland, lost her mother in the Holocaust. She learned to cook and bake from her aunt, refining recipes over the years. Now, her daughter shares this crowd-pleasing honey cake.
1/2 cup brewed coffee, cooled
3 1/2 cups sifted all-purpose flour
1/4 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon powdered cloves (optional)
1 1/2 teaspoons powdered ginger (optional)
4 eggs
1 cup sugar
1 cup vegetable oil
2 cups dark honey
1 1/2 cups coarsely chopped walnuts or almonds
1 cup raisins (optional)

The Shanahtini: A Rosh HaShanah Cocktail

Entertain your Rosh HaShanah guests while enjoying the traditional holiday nosh of apples, honey, and pomegranate seeds in a new way.

2 Granny Smith apples
1 ½ oz vodka or gin
¾ oz Berentzen Apple Liqueur
½ oz strained lemon juice
Fee Brothers Rhubarb Bitters
12 oz honey
2 cinnamon sticks
1 tsp whole cloves
1 tsp whole allspice (not ground)
8 oz water
Pomegranate seeds

Apple and Honey Jello Shots

For a fun Rosh HaShanah treat, try these jello shots with, vodka, honey-flavored whiskey, or without alcohol. You can make the cute apple wedges as described below, or simply in small plastic shot cups, garnished with a slice of apple and pomegranate seeds.

6 apples (Granny Smiths work well, but any kind will do)
1 lemon
1/2 cup honey
1/3 cup apple juice (or 1 cup if making non-alcoholic shots)
2/3 cup vodka or honey-infused whiskey
1/4 cup cold water
1 packet (3 tsp) powdered, unflavored gelatin or gelatin substitute (agar, vegan jel, etc.)
